Turkey Bacon Egg Burritos

This is such a great filling breakfast. My mom used to always make us burritos for breakfast before school. They are easy, cheap, and filling.

Serves: 10
Total Cost: $8.52
Total cost per person: 85 cents

Ingredients:
Jennie O turkey bacon (half a package) $1.40
Flour Tortillas (10 pack) $1.99
1 dozen eggs $1.69
3 pounds of peeled and cut potatoes $1.40
1 tablespoon vegetable oil $.05
8 ounces of shredded cheddar cheese $1.99

Pre-heat skillet. Add vegetable oil to the pan.  Next add potatoes to the pan and cook them for about 5 minutes. Turn the temperature down to low. Cover the pan, and stir occasionally for about 20 minutes.

While the potatoes are cooking, fry the bacon, in a separate pan until fully cooked. Remove bacon from pan. DO NOT drain the grease.

Beat eggs in a large bowl. Scramble them in the same frying pan that the bacon was in.

Place a tortilla on a plate, top with scramble eggs and shredded cheese. Serve  fried potatoes on side.

Since the average person is usually full after one tortilla and serving of potatoes, this recipe serves 10!
